The same is true for Easter, especially when you top the treats with colorful Peeps!

    You’ll notice all the usual rice krispie treats ingredients in this recipe plus a few extras that take these treats over the top. As always, you can find the full, printable recipe card at the end of this post. Let’s take a quick look at what you’ll need:

    • mini marshmallows – some of the marshmallows will be melted and some will be added in later so they stay mostly whole.
    • salted butter – if using unsalted butter, add half a teaspoon of salt to the recipe.
    • vanilla extract – use the best quality you have on hand for the best flavor.
    • Rice Krispies cereal – you’ll need seven cups of puffed rice cereal.
    • candy melts – this is totally optional but adds a festive finish to these rice krispie treats with Peeps. I used white Ghirardelli melting wafers but you can buy candy melts in assorted colors to get even more color in these treats.
    • sprinkles or jimmies – to decorate the top of the treats. A great way to use up those extra sprinkles!
    • Peeps – while the Peeps are optional, they sure do add a festive finish to these treats.

    RECIPE TIP: Make sure to use fresh marshmallows for those extra ooey gooey treats! (Older marshmallows can dry out and won’t give you the best results.)

    How To Make Easter Rice Krispie Treats

  • Spray a baking dish and then line with parchment paper.
  • Melt butter over low heat, stirring frequently.
  • Add in all but one cup of marshmallows and stir until coated.
  • Continue stirring until the marshmallows are melted.
  • Remove from heat and stir in the vanilla extract.
  • Add in the cereal and reserved marshmallows and fold in just until coated.
  • Transfer to the prepared baking dish and lightly press the mixture into an even layer.
  • Set up for 30 to 60 minutes at room temperature.
  • Cut into squares or rectangles using the Peeps as a size guide.
  • Separate the treats and drizzle with melted candy melts and colorful sprinkles.
  • Top with a Peep, pressing in slightly.
  • Candy melts can be found in a variety of colors and are available online, in grocery stores as well as most craft stores. I used Ghirardelli Melting Wafers for my treats and these are also widely available.

    Storage Information

    These rice krispie treats with Peeps are best eaten within 3 days of making them. Place them in an airtight container or store in an airtight, ziploc bag at room temperature.

    To Freeze: Wrap squares in wax paper or parchment paper and transfer to a freezer safe, ziploc bag and freeze for up to 3 months. Thaw at room temperature.

    Tips and Tricks

    This recipe is super simple but check out these tips for the best results!

    • Melt the butter and marshmallows over low heat. Not only does it eliminate the possibility of them burning it results in softer treats.
    • Make sure to line your baking dish with parchment paper – it makes lifting out the bars super easy. If you don’t have any, no worries. Just make sure to liberally spray your dish with non-stick baking spray or grease with butter and then cut right in the dish.
    • When pressing the treats into the pan, use a gentle touch. You don’t want to compact the rice krispies treats or they will be tough and hard.
    • Over mixing can cause the rice krispies to get crushed which results in a harder, less chewy treat.
    • Separating the bars first is just a personal preference. You can drizzle, decorate and then cut but I like the look I get more when the bars have been cut first.

    Can this recipe be doubled?

    Absolutely! Just use two baking dishes and make sure that your dutch oven or pot can accommodate the extra ingredients.

    Do I have to use Peeps?

    Of course not! This recipe is amazing on it’s own. But if you are planning on making for Easter, at least consider adding the melts and sprinkles.

    How should I pipe the candy melts or melting wafers?

    The simplest way is to transfer to a small ziploc bag (freezer bags are great because they are more heavy duty) and snip off one corner of the bag. Lightly squeeze the bag and drizzle over the treats on the diagonal and then top with sprinkles.

    • Spray a 9”x13” baking dish with non-stick cooking spray and then line with parchment paper. Set aside.

    • Liberally butter a rubber spatula (including about 3 inches of the handle).

    • Melt butter in a large, non-stick pot or dutch oven, over low heat, stirring frequently.

    • Set aside one cup of marshmallows. Add in the remaining marshmallows and stir until coated with butter.

    • Continue melting the marshmallows over low heat, stirring frequently, until the marshmallows are melted.

    • Remove from heat and stir in the vanilla extract. Add the cereal and the reserved one cup of marshmallows to the pot and fold in just until coated. Don’t over mix or it will break down the cereal.

    • Transfer the mixture to the prepared baking dish and using a buttered spatula (or your fingers) lightly press the mixture into an even layer.

    • Let the rice krispie treats set up for 30 to 60 minutes at room temperature.

    • Use the parchment paper to lift the rice krispie treats out of the pan and cut into squares or rectangles using the Peeps as a size guide.

    • Separate the treats and drizzle with melted candy melts and colorful sprinkles. Immediately top with a Peep, pressing in slightly so that as the candy sets up, the Peep will adhere to the rice krispie treat.
